Coconut Almond Cups

Ingredients for Coconut Filling:

1/2 cup raw unsweetened shredded coconut

1 Tablespoon coconut milk

1 Tablespoon raw honey

1 teaspoon vanilla

12 – 14 whole almonds


You will need:

2 batches Chocolate Sauce

You will also need – Mini Muffin Paper Cups



Combine all ingredients for Coconut Filling. Stir until smooth.

Place 12 – 14 mini muffin paper cups onto a flat tray that can go into the freezer. Pour just enough chocolate into each cup to cover the bottom of the paper muffin cup. Place tray with muffin cups into freezer for approximately 5 minutes. Make sure they are level.

Remove tray from freezer. Place approximately 1 teaspoon of coconut filling into each cup leaving a bit of space around the edges. Press the filling down a bit to make it flat on top.

Place one almond in the center of each cup.

Pour remaining chocolate evenly over each cup to fill cups to 3/4 full. Place back in freezer on level surface. In approximately 10 – 15 minutes your coconut almond cups cups are ready to enjoy.

You may store coconut almond cups in an airtight container in the freezer until ready to serve. They are best if you let them sit out of the freezer for a couple minutes before serving.

Makes approximately 12 pieces
