Coconut Cream & Fruit Parfait

This makes a delightful breakfast or treat any time of the day.

Ingredients for parfait cream:

1 cup coconut pulp (from making homemade coconut milk) or just use 1 cup unsweetened raw organic coconut

4 Medjool dates

1/2 cup coconut water

1/2 cup raw cashews

1/2 teaspoon vanilla

 

You will also need:

Fresh fruit

 

Preparation:

Place all ingredients except for fruit into a high speed blender and blend until smooth.

Layer parfait cream with fresh fruit into serving dishes, placing a layer of fruit and then a layer of parfait cream and continuing in this manner until each container is full.

Top with fresh berries and serve or cover and store in refrigerator for up to 2 days.
