Coconut Flour Pancakes



4 organic pastured eggs

1 cup homemade almond milk, coconut milk or other nut or seed milk

2 teaspoons vanilla extract or better yet use fresh vanilla from the bean

20 drops Stevia or 1 Tablespoon honey

1/2 cup coconut flour

1 teaspoon baking soda

1/2 teaspoon high quality sea salt

2 – 3 Tablespoons Coconut oil (to cook the pancakes in)



In a medium bowl beat eggs until frothy,  about 2 minutes. Add “milk” vanilla and Stevia (or honey).

In separate bowl combine coconut flour, baking soda and salt. Mix well.

Stir dry ingredients into wet ingredients and let sit 5 – 10 minutes to thicken a bit.

Heat the coconut oil over a medium heat in a fry pan. An electric fry pan set to 350°F works well. Using a 1/8 cup measure, pour pancake batter into pan. Let sit for just a minute and then give the pan a bit of a jiggle to even out the batter. Cook until golden on one side then flip and finish cooking.

NOTE: Coconut flour pancakes cook up a bit different than traditional flour pancakes. They actually cook more like a souffle (having more egg than flour in the recipe). They may look like they are not cooking through but they are. Do not turn up the heat. Just let them cook and then flip them. If they are on the thick side the batter may still be a bit runny when you flip them. I had a few messy ones when I first started. (but they were still yummy albeit not beautiful) This is why I like to give the pan a jiggle to spread out the batter. It may take experimenting a few times to get the knack of it. But these yummy darlings are worth the effort. They are fabulous even if you don’t have the cooking and flipping mastered just yet.

You may make the batter ahead and refrigerate over night. Then you are ready for a quick breakfast in the morning. Plus bonus, the batter thickens a bit which makes flipping supper easy!

We also make these up and keep them in the fridge or freezer. We simply heat them in the toaster oven for a super fast and nutritious breakfast literally in minutes.

With a couple minor tweaks these pancakes make wonderful shortcakes for Strawberry Shortcake , or Blueberry Shortcake or Peach Shortcake…..well you get the idea.
