Lynn’s Whole Grain Crusty Bread


After one of my surgeries, friends of ours, Carl and Lynn, brought dinner to us.  Wonderful organic stew and a fresh loaf of this bread.  We had to have the recipe.  Now I am sharing it with you.  Hope you love it as much as we do :)

Ready in 20 ½ hours

Creates a 1 ½ pound loaf

Start the day/night before; needs 12-18 hours rise time, plus 2 hour final rise.


1 ½ cups Whole Rye flour

1 ½ cups Whole wheat flour

½ tsp active dry yeast

2 teaspoons sea salt (or less if desired)

1 5/8 cups of warm water (hot temp will kill the yeast)

Cornmeal/rye meal as needed

Except the cornmeal, combine all ingredients until well blended, Dough will be shaggy and sticky!!

Keep in bowl, cover with plastic wrap or lid, wrap bowl with a towel or blanket, tuck it in cozy for the night and let rise 12-18 hours in 70° F.

When surface is dotted with bubbles it is ready. Fold dough over onto itself once, twice, three times until top dry part is all mixed in. Use a rubber spatula.

Generously coat smooth cotton towel with cornmeal/rye meal and using rubber spatula, shape dough into ball and dump dough on cornmeal/rye meal towel. Sprinkle top of dough with more cornmeal/rye meal and cover with another towel. Let rise about 2 hours.

AT LEAST 3O MINUTES BEFORE DOUGH IS READY, PREHEAT OVEN AND 2 ½ COURT POT WITH LID (Dutch oven, stainless pot, casserole…etc) to 425° F

Put dough in pot, cover, and bake for first 30 minutes, then remove cover and bake 25 minutes more. Then, with oven mitts, onto clean towel, turn pot upside down, loaf will release easily. Cool for at least 10 minutes.


  • Try to always use organic ingredients when available.
  • I always make at least 2 loaves at once. I bake them in the oven at the same time.  It hardly takes any longer to make two as it does to make one, and you can always throw a loaf in the freezer.
  • Because we keep our house cooler than 70° F at night in the winter, we place our bowls of dough on the bathroom counter top and run a small space heater in that room over night.
  • This bread if fabulous toasted with a little coconut butter on it.
