Quinoa and Black Beans

1 cup quinoa

2 cups veggie stock

½ tsp. sea salt

1 – 15oz. can organic black beans

3 green onions chopped

Juice of one lime

Zest of one lime

1 Avocado

3 Roma tomatoes

½ tsp. sea salt

½ tsp. pepper

Cook quinoa in veggie stock with ½ tsp. sea salt

Place all ingredients in a bowl. Add quinoa into bowl, mix together and serve.
