Raw Ginger Thai Soup



 5 cups Thai coconut water
Juice of 1 lemon – approx. 1/3 cup
1/3 cup olive oil
3″ piece ginger, peeled
5 cloves garlic, peeled
1/4 teaspoon high quality sea salt
1 Tablespoon curry powder


Combine all ingredients in a high speed blender and blend until smooth. Strain in a mesh strainer to remove any remaining ginger pulp. Garnish and serve.


Slice 2 mushrooms thin and soak in 1 cup water with ½ teaspoon sea salt for 1 hour.

Garnish soup with soaked mushroom slices and diced green onion tops.
